Honey Glazed Salmon with Garlic Spinach and Pine Nuts

Garlic Spinach with Pine Nuts

Baby spinach

(Finely Chopped)

Instructions

Marinate the salmon fillets with some olive oil, salt and pepper and the cayenne pepper but coating the fillets on all sides.

Heat a frying pan to a low medium heat and add the butter. After the butter has melted, fry the garlic for a few minutes and then add honey, soy sauce and water.

Allow the sauce to simmer, and keep the thickness of the glaze thinner by repeatedly adding small amounts of water.

Meanwhile either prepare a kettle of water or bring a large pan of water to a rolling boil.

Cook the salmon in the glaze, occasionally using a spoon to pour the glaze over the fish. For small 120g sized fillets, the cooking will be approximately 4 minutes on bottom and top, and then 2 minutes on each side.

Whilst the salmon is cooking, boil the spinach in the large pan by adding the hot kettle water, and boiling for approximately 2 minutes.

Remove the spinach and drain fully in a colander and further pressing the spinach by pushing it out with the back of a spoon, or alternatively spinning it in a salad spinner to extract as much water as possible.

Ensure the pan is dry and, fry pine nuts in a little oil before adding garlic. When the garlic starts to brown, return the spinach to the pan and fry for a few minutes.
