French toast is a dish made of sliced bread soaked in eggs and milk and fried and can be both sweet or savoury, I definitely prefer this as a sweet dish that I can eat for breakfast. French toast has a long history and is in the Apicius, a collection of Latin recipes dating to the 4th or 5th century, where it is described as simply aliter dulcia (“another sweet dish”). That recipe says to “Break fine white bread, crust removed, into rather large pieces which soak in milk and beaten eggs fry in oil, cover with honey and serve.”.

 

It has been recommended to soak the bread overnight, I don’t see any real benefit in doing so, a simple soak and fry technique will work just as well, so why not follow this recipe and give it a go, I think you’ll enjoy it too.

  • In a bowl, whisk together the egg, milk and cinnamon.
  • Heat a frying pan to a medium heat.
  • Starting with one piece of bread, soak it in the mixture. Be careful not to soak it for too long as the bread will become too soft to easily move it from the bowl to a frying pan.
  • Add some butter to the hot pan, and move it around to coat the pan. Once coated, take the soaked bread and fry for a few minutes on each side. As the bread is cooking, prepare the next slice of break in the liquid mixture.
  • Once fried, sprinkle the bread with caster or icing sugar to taste.
